This is a recipe by my MIL, she's been asking me to try this for a long time, finally made it today. Koozh would be the apt word for this , than to say it as kheer. Koozh is something very similar to porridge, smooth, creamy and thick in consistency. I found that coconut flavour is more dominating than pumpkin seeds, infact I couldn't find any trace of pumpkin seed . Whatever, since I always love coconut flavour, I'm happy with this, hope you all enjoy it too.<br />

Sugar - 4 tbsp ( vary it according to your taste )<br />

Water- 2 cups<br />
Rose essence - 1/2 tsp ( optional )<br />

Soak the pumpkin seed and rice in water separately for 1 hour. Peel the skin off from the seed, since the skin will give a unpleasant taste. Grind together coconut, soaked rice , cardamom podand peeled seeds until it's very smooth and creamy. Mix the ground mixture with sugar and water. Heat the mixture in medium flame and keep stirring continuously until it looks thick porridge like consistency. Finally add the rose essence. Serve it warm or cold.<br />

Now coming to the recipe it's a Mava/ Khoya cake. I decided to blog about it but once I baked it and tasted it, OMG ! My business mind started whispering do you really have to blog about this, it's so good, keep it as your secret business recipe :) Nooo.. after all sharing is one of the best thing to do and I'm not the one who first found this recipe. So here I'm with a fluffy, buttery and yummy Khoya cake, Enjoy .....<br />

Bicarbonate of soda- 1/4 tsp<br />

Preheat the oven to 180 degree Celsius. Grease and line a 15 cm square cake. Cream butter and sugar until it looks fluffy. Add the khoya and start beating well until it gets mixed together. Add eggs one by one until it gets mixed together. Add the saffron and cardamom mix well. Sift the flour, baking powder and soda in a separate bowl. Add the flour and milk alternatively to egg mixture and beat well.<br />

Pour the batter into the greased pan and bake it in the preheated oven for 30 to 40 minutes or until a skewer inserted comes out clean. Take it out from the oven, cool it in the rack for few minutes. Gently remove the cake from the pan, let it cool down completely. After cooling down completely, slice it and store it in a air tight container.</div>

Coming to the recipe, when I was browsing through some food pictures in pinterest, I found this. At a first glance, I almost thought it was like Murukku ( Indian Rice flour fritters ). Sometimes some recipe tempts to try it immediately, this is one among them.<br />
Although it looked similar to Murukku, it tastes completely different. The crispy sides and the soft centered with cheesy flavours hitting in between is yummy to snack, especially on a cold evening or even as a brunch.<br />

Makes 8-10<br />
Preparation Time: 15 minutes<br />

Dried Spaghetti- 150 g<br />
Garlic- 2 cloves grated<br />
Parmesan cheese- 2 tbsp<br />
Eggs- 2<br />
Egg yolk- 1<br />
Chilly flakes- 1 tsp<br />
Italian seasoning- 1 tsp ( optional )<br />
Coriander leaves- 2 tbsp ( finely chopped )<br />

Break the spaghetti into half and cook it in hot boiling water, once cooked, drain it from water and set aside. Break the eggs into a large bowl, add the seasoning, chilly flakes, cheese, spaghetti and salt and pepper to taste.<br />

Take a flat non stick pan, add about a tbsp of oil. Pour a ladle of spaghetti mixture in hot oil, once sides looks crispy or brown, turn it around and cook it for further few minutes. The fritters should be crispy around the edges and soft in the centre. Serve while they are still hot with ketchup or any hot chutneys.</div>

Cover and let it simmer for about 3 minutes. When you open the pan, the colour of the tomatoes </span><span style="font-family: inherit;">should be in bright red colour and the oil should start leaving the sides of the pan. </span><br style="font-family: inherit;" /><span style="font-family: inherit;">At this stage add the cooked soya beans, channa masala powder, salt and stir well. Cover and cook for a few minutes until the masala</span><span style="font-family: inherit;"> gets incorporated well. Finally add the palak puree, stir well, let it simmer for 2 minutes. Switch off the flame. Yesterday was <a href="http://kochtopf.twoday.net/stories/announcing-world-bread-day-2012-7th-edition/" target="_blank">World Bread Baking Day</a>. After missing my chance for last year, I was desperate to attend it this year. Unfortunately whenever I try to bake for some important occasions, I experience these power load shedding, fuse gets burnt and finally no current for the whole day. The same happened yesterday too, so I completed my bread after 8 p.m , which is not a good time for me to picture it, since I depend on natural light 100 percent.<br />

So here I am posting my Cinnamon Coconut Buns today. This might be just an ordinary coconut bun but I love the flavour of coconut in all food. Whenever I use coconut in any sweet or dessert, normally I would like to flavour it with cardamom, this time for a change I used cinnamon. Freshly baked bread always fills your home with a nice aroma, that too if you are having any flavours like cardamom, nutmeg or cinnamon in your bread, the aroma released from the bread is extraordinary. Go ahead, bake it and experience it.<br />

Makes 1 medium sized loaf<br />
Preparation Time: 20 minutes+ rising time<br />
Cooking Time: 30- 40 minutes<br />

<b>Ingredients</b><br />
All purpose flour- 500 g<br />
Yeast- 4 tsp<br />
Egg- 1<br />
Milk-200 ml+ extra if needed<br />
Butter - 1 tbsp<br />
Sugar- 1 tbsp<br />
Salt- 1 tsp<br />

For the filling:<br />
Fresh grated coconut- 150 g<br />
Brown Sugar- 2 tbsp<br />
Cinnamon powder- 1/2 tsp<br />
Butter- 1 tbsp<br />
<br />
For Egg wash:<br />
Egg- 1<br />
Vanilla essence- 1/2 tsp<br />
Granulated Sugar- To sprinkle on top <br />

<b>Method: </b><br />
Mix together the flour, salt, sugar and yeast in a large bowl. Make a well in the center, add the egg. Heat the butter and milk together until the butter gets melted. Add the milk mixture little by little into the flour mixture and start beating with a electric mixer with a dough tool until the dough holds together.<br />
Turn the dough into a floured work surface and knead it well for about 5 minutes. Place the dough in a clean oiled bowl, cover with a cling film or a warm tea towel and let it rise for 1 to 2 hours until it looks doubled in size.<br />
<br />
Mean while start preparing the filling by melting the butter in a pan, then add the coconut and sugar. Stir well until the sugar melts completely and gets incorporated with the coconut well. Finally add the cinnamon powder, mix well and take it off from heat.<br />
<br />
Once the dough looks raised, punch the air back, do not knead it too much. Divide the dough into 5 equal rounds. Roll one round into 8 cm length and 2 cm wide. Place the filling in the middle and then roll it up. For the remaining 4 rounds, roll each one into a circle of 8 cm diameter. Apply the filling in the middle of the circle, fold it into semi circle, again apply the filling on top, and then fold it again to form a triangle, repeat this with the remaining 3 rounds.<br />
<br />
Grease and line a 8 cm round cake tin, place the circle in the middle and all the triangles on the sides. Cover it loosely and let it rise for 20 minutes. Preheat the oven to 220 degree Celsius. For egg wash, beat together the egg and vanilla essence. Brush the egg wash on top of the bread and sprinkle with granulated sugar on top. Bake it in the preheated oven for 30 to 40 minutes or until the top of the bread looks light brown in colour. Take it out from the oven, cool it in the wire rack for 5 minutes, remove it from the tin and serve while they are still warm.<br />

Note:<br />
This bread doesn't have to be only in this shape, you can also make it like normal buns. Just take a small ball flatten it, place the filling, cover the ball and again or any other creative shape too.<br />

Festive season, Get together with friends , dinner party, wedding occasion, dessert which comes to my mind immediately is Phirni. After a heavy main course like Biryani or any spicy curries, phirni is something which cools and soothes you. A traditional phirni is made using ground rice, although it's not that complicated process, I always prefer the instant version using semolina. Personally I don't see any wide difference between semolina phirni and ground rice phirni in terms of texture and flavour. Also this Instant version is a solution to quick dessert.<br />

Few weeks back my husband gave me a surprise that I had won an award from his company, I was astonished that why would his company give me award and for what. He said it's Mahindra's Rise value. When I was in off blogging mode , this is one of the reason which made me get back into blogging and also I would like to thank those wonderful blogger and non blogger friends who cheered me to get back to blogging, so here I am with this sweet relish.<br />
<br />
Serves 8<br />
Cooking Time: 15 minutes<br />
<br />
<b>Ingredients:</b><br />
Milk- 1 litre<br />
Semolina- 4 tbsp<br />
Sugar- 4 tbsp<br />
Cardamom powder- 1 tsp<br />
Saffron- 1/2 tsp soaked in 1 tbsp warm milk<br />
Kewra essence- 1 tsp <br />
Almonds, pista- each 10, chopped coarsely<br />

<b>Method:</b><br />
Boil the milk, once it boils, add the semolina little by little stirring continuously. Once the semolina gets cooked, add the sugar and keep stirring until the sugar gets dissolved completely<b> </b>. Now add the cardamom powder, saffron soaked in milk, kewra essence and chopped nuts,stir well. Switch of the flame. You can serve it immediately while it's still warm with some chopped nuts and saffron on top for garnish or let it cool down, chill in the refrigerator and serve it cold, either way it tastes good.<br />

<b>Note:</b><br />
The amount of sugar is bit low according to our taste buds, so you can add more sugar if you want. Also a tablespoon of condensed milk at the end will give much more rich flavours.<br />

My Little contribution to this Pink October is this refreshing Beetroot Gazpacho. There is a good saying that Prevention is better than cure. To defend our body from these horrifying diseases it's always good to look out for what we eat. We are what we eat. To keep our body sound and health, it's good to have a well balanced nutritious diet.<br />

Beetroot is one of those super vegetable which has loads of vitamins and minerals. Raw beetroot gives most of the vitamins and minerals. Gazpacho is a Spanish style cold soup. This is traditionally made with tomatoes and now we have many variations using avocado, carrot, beetroot etc.<br />

At my first glance I too had a lots of doubts with this, a soup with no cooking, cold and beetroot as a star ingredient is it going to be too sweet with dominating beetroot flavours. I was completely wrong, with a touch of few other ingredients, this is a bowl of refreshment to start your day. One more good thing about this soup is since it's served cold, it can be made well ahead and you can store it in the refrigerator. When you try it you'll see the wonders.<br />

Beetroot- 2 medium sized<br />
Cucumber- 1 small sized<br />
Tomato- 1 medium sized<br />
Garlic- 4 cloves<br />
Olive oil- 4 tsp<br />
Water- 150 ml<br />
Bread - 1/2 of 1 slice<br />
Croutons- to garnish on top<br />
Coriander leaves- to garnish on top<br />
Salt and pepper to taste<br />

<b>Method: </b><br />
<br />
Preheat the oven to 220 degree Celsius. Loosely cover the beetroots in foil paper. Place it in the preheated oven for about 20 minutes. Let it cool down, peel and chop it roughly. Roughly chop 1/4 of cucumber and 1/4 of tomato. Add the beetroot, roughly chopped cucumber, tomato, garlic, bread, olive oil, water, salt and pepper to taste. Blend it until you get a smooth puree. The consistency shouldn't be too thick like a cake batter or runny like a milk. It should be just thick enough to fall of from the spoon. You can serve the soup immediately or chill and serve.<br />
Just before serving chop finely the remaining cucumber and tomato. Add the finely chopped cucumber and tomato along with croutons and coriander leaves on top of the soup.<br />

Keshkul (KEŞKÜL) is a Turkish dessert made of milk ,rise flour , corn starch and almonds these are the main ingredients, some Turkish people add one egg yolk others don’t but this recipe has more rich flavor because off apple and cinnamon I think this recipe is suitable for Baby and Toddler .<br />
<br />
Ingredients:<br />
1/3 cup ground almonds<br />
4 cups milk (1 liter)<br />
4 tablespoons granulated sugar<br />
3 tablespoons rice flour<br />
1 tablespoon of corn starch<br />
5 apples<br />
½ cup granulated sugar<br />
½ cinnamon<br />
<br />
Preparation :<br />
1-Peel the apples, Put in a pan , add sugar put the lid on and cook apples with its own water on a low heat when it is semi cooked add cinnamon continue cooking with the lid off until tender put aside to cool .<br />
2 -Put the milk in a dip saucepan , Add powdered sugar , rice flour and corn starch and cook until the consistency is thick ,add ground almonds, stir well .<br />
3 –put half of the cooked apples in 4 serving pots pour the pudding let to cool completely ,decorate with the rest of apples .<br />

In my last post I mentioned that we are just ready for this month challenge in Fried to Favourite and here we are. This month I made Dahi Vadas for our challenge Fried to Favourite. We always enjoy Dahi vadas, particularly during Ramdhan, it's a must on Iftar table.<br />
<a name='more'></a>As Ramadhan is getting very closer, I was super excited to make these baked version of Dahi vadas. After all feeding our family with the best food, fills our heart with tranquility.<br />

I baked these vadas in a mini bun tin, for which you have to spray some cooking spray or grease lightly with oil to avoid sticking to the pan. If you are using silicone mould, you can go for zero oil. When these baked vadas are used in Dahi vadas, it's really hard to identify that they are baked and not fried. <b>Ingredients:</b><br />
Dosa batter- 1 litre ( recipe follows )<br />
Yogurt- 500 ml<br />
Tamarind chutney- few teaspoon ( recipe follows )<br />
Savoury Boondhi- 1 tbsp<br />
Coriander leaves- 2 tbsp ( finely chopped )<br />
Oil- to grease the tray<br />
Salt to taste<br />

<b>Method:</b><br />
Preheat the oven to 200 degree Celsius. Grease lightly the bun or muffins. Fill it with the batter. Put it inside the oven for 20 minutes. Insert a toothpick or skewer to check if it's cooked. Take it out from the oven. Carefully remove it from the tin with the help of a spoon.<br />
Beat the yogurt along with salt and few tablespoons of water. Drop the baked vadas in the yogurt. Drizzle with tamarind chutney, sprinkle savoury boondi and coriander leaves on top. Serve it immediately or keep it in the refrigerator until you serve.<br />

Note:<br />
In case you are baking the vadas well ahead before you serve. Soak the vadas in hot water for about 5 minutes and then drop it in yogurt. Also fresh dosa batter makes the best, than the old one.<br />
<br />
<b>Dosa Batter Recipe</b><br />
<br />
Ingredients:<br />
Parboiled rice- 3 cups<br />
Urad dhal- 1 cup<br />
Salt to taste<br />
<br />
Method:<br />
Soak the rice and dhal separately for about 3 to 4 hours. Grind them separately. Rice batter has to look slightly coarse and urad dhal batter has to come fluffy. Mix the two batter along with salt and set aside for about 6 to 8 hours until they ferment and doubled in bulk. Then use the batter as suggested in the recipe.<br />

<b>Tamarind Chutney Recipe</b><br />

Tamarind- a lemon sized ball soaked in water<br />
Dates- 4 pitted<br />
Jaggery- 3 tsp<br />
Chilly powder- 1/2 tsp<br />
Ginger powder- 1/4 tsp<br />
Methi powder- 1/4 tsp<br />
Salt to taste <br />

Method:<br />
Extract the juice from the tamarind soaked in water. Grind the dates along with little tamarind water. Add the tamarind juice, ground dates, chilly powder, methi powder, salt and 1 cup of water in a pan. Bring it to boil, reduce the flame and simmer it until you get a thick sauce like consistency.<br />
Cool this sauce completely and store it in the refrigerator for about a month and it can be used whenever necessary. <br />

Oh yes, you read the title right. It's the same good old onion rings in baked form and not fried in oil. Well, I don't take the pride of introducing this recipe first online. Though there are many sources available for baked onion rings, I never thought it would turn so good. Before talking about this recipe, I should say how I got the idea of baking these delicate darlings.<br />

Basically the idea is to cut down the maximum amount of oil from our day to day food. Most of us are addicted to these fatty fried food and get used to it. At one point we realize that enough of these fried foods, let's start a healthy life style. Healthy eating doesn't mean we have to compromise our favourite food completely. The better way is to find an alternative method, so that we can enjoy our favourite food without any compromise in our healthy life style. So the idea behind this event is to choose any one or two of our favourite food and find an alternative by baking or steaming. <br />

Onion- 1 big sized (quartered and separated into rings )<br />
Cornflakes- 1 cup<br />
Bread crumbs- 1/2 cup<br />
Buttermilk- 1/2 cup<br />
Plain flour- 1/4 cup<br />
Chilly powder- 1/4 tsp <br />
Egg- 1<br />
Olive oil- 2 tbsp<br />
Salt and Pepper to taste.<br />

<b>Method:</b><br />
Powder the cornflakes and breadcrumbs together in a blender. Mix together buttermilk, plain flour<b>, </b>egg, chilly powder, salt and pepper. Dip the onion rings in the mixture, remove it , shake off the excess liquid. Now place the onion rings in a tray with cornflakes and breadcrumbs mixture. Coat the onion rings in the cornflakes mixture well.<br />
Preheat the oven to 220 degree Celsius. Pour the oil on a rimmed baking sheet, tilt the oil to coat the tray completely. Alternatively you can also use cooking oil spray. Place the onion rings one by one in the tray. Cook it for about 20 minutes, turning it in the middle. This is one of the recipes which I have been eyeing for a long time now. I never liked the word cheesecake, somehow blogging and the amazing pictures caught my attention. After tasting this light and soft cheesecake, I doubt if I would go back to the normal cakes. Anyway, we enjoyed this cake a lot, to the extent that me and my kids polished it off within two hours, I'm sure you'll enjoy making this.<br />

Makes about 8 to 9 slices<br />
<br />
<b>Ingredients:</b><br />
Cream Cheese- 250 g<br />
Egg yolks-6<br />
Egg whites- 6<br />
Plain flour- 80 gm<br />
Baking powder- 3/4 tsp<br />
Butter- 50 gm<br />
Milk-100 ml<br />
Sugar- 140 gm<br />
Vanilla essence- 1 tsp<br />
Grated lemon zest- 1/2 tsp<br />

<b>Method:</b><br />
Melt together butter, cream cheese and milk in a double boiler until it reaches a liquid consistency. Pass it through a sieve to make it lump free. Let it cool down for a while, add the vanilla essence, lemon zest and egg yolks. Sift the flour and baking powder into the cream mixture. Gently give it a good mix.<br />
Beat the egg whites separately using an electric mixture until it looks like foam. Add the sugar little by little and beat until it reaches a glossy look.<br />
Fold the egg white mixture into the cream cheese mixture little by little. Preheat the oven 180 degree Celsius. Grease and line a 8 or10 inch round cake tin. Pour the mixture into the cake tin, place it in a water bath and bake it for about 1 hour 20 minutes. Leave it to cool in the oven for 30 minutes. Remove it from the oven. Carefully remove it from the tin, slice and serve.<br />

Note:<br />
The oven temperature might vary for different oven, so check after 1 hour to see if it's cooked by inserting a skewer in the middle. Well, Well, I know it was a very long break for me from blogging, still I dint feel like get back into blogging. It has become almost like a restart problem for me to get back into blogging after a long time. Although I made this recipe well ahead of time, since I knew I was going to travel to my mom's place. Unfortunately I couldn't do any blogging or posting when I was there. So here I am posting my very post for<a href="http://thedaringkitchen.com/" target="_blank"><i> Daring Baker's</i></a>.<br />

Challah is a Jewish bread, which is traditionally made in the braided form. They also make it in the form of festive knots, eight shaped, round challah, star shaped, ladder shaped and so on. Braided bread is made of 3, 4 or 6 strands. Since I found the 4 and 6 strands to be very complicated, I went with 3 strands and rest as knots and eight shaped challah. <b>Ingredients:</b><br />
Plain flour- 500 g<br />
Eggs- 3<br />
Honey- 90 ml<br />
Sugar- 1/2 tbsp<br />
Saffron- 1/4 tsp soaked in warm milk<br />
Cardamom powder- 1/2 tsp <br />
Dried yeast- 1 tbsp<br />
Warm water- 270 ml<br />
Salt- 1 tsp <br />
<i>For Egg wash:</i><br />
1 egg beaten with 1 tbsp of water.<br />

<b>Method:</b><br />
Sift the flour and salt in a large bowl. Add the sugar and yeast mix it well. Make a well in the middle, add the eggs, honey, saffron, cardamom powder and warm water. Slowly start beating with a electric beater fitted with dough hook until the dough gets incorporated and comes together. Once the dough comes together, knead for about 10 minutes. Take a clean oiled bowl, place the dough in the bowl. Cover with a tea towel and let it rise in the warm place for about 2 hours until doubled in bulk. <br />
Once the dough gets doubled, knock the air back. Divide the dough into 5 equal parts and shape it into braids, knots or eight shape. To make different shapes, please view<a href="http://www.secretofchallah.com/50708/Braiding-Instructions" target="_blank"> here</a>.<br />
Preheat the oven to 190 degree Celsius. Place the shapes in the baking tray. Cover loosely with a oiled cover. Let it rise in a warm place for 30 minutes. Brush it with egg wash and bake it in the preheated oven for 30-40 minutes. Take it out from the oven, let it cool in the rack for 10 minutes. Serve it while they are still warm or store it in a air tight container to keep it fresh.<br />

Mutton Ularthiyathu is a traditional recipe from Kerala. Originally this recipe is made with beef, since we don't take beef much, I made this with mutton. When it comes to Non-vegetarian, I prefer these dry fry or kebabs compared to curries or kurmas. You can get the best of this recipe when it's prepared in a clay pot. The aroma released from the spices while cooking might lead to even some uninvited guests ;-)<br />
Serve this with plain white and any curries or with chapathi's, parathas and appam.<br />

Mutton- 1/2 kg ( preferably boneless )<br />
Onion- 1 medium sized ( sliced thinly )<br />
Green chilly- 2<br />
Ginger garlic paste- 2 tsp <br />
Fresh grated coconut- 2 tbsp<br />
Lemon- juice of 1/2 a lemon <br />
Garam masala- 1/4 tsp<br />
Turmeric powder- 1/4 tsp<br />
Oil- 1 tbsp<br />
Salt to taste<br />

<i>To be ground:</i><br />
Coriander seeds- 3 tsp<br />
Red chillies- 4<br />
Black peppercorns- 1/2 tsp<br />
Fennel seeds- 1/2 tsp<br />
Cinnamon- 1/4 inch stick<br />
Cloves- 1<br />
<br />
<b>Method:</b><br />
<br />
1. Dry fry all the ingredients in the to be ground list and grind into a fine powder or paste by adding little <br />
water.<br />
2. Wash the mutton well, marinate with 1/2 of the ground masala, ginger garlic paste, turmeric powder,<br />
garam masala and lemon juice for about 1 hour.<br />
3. Cook the marinated mutton in a pressure cooker for upto 5 whistles without adding any water or oil.<br />
4. Heat oil in another kadai or heavy bottomed pan, add onions, curry leaves, green chillies and coconut.<br />
Saute well until the onions look lightly brown in colour. <br />
5. Now add the cooked mutton, stir well. Add salt to taste, cover it with a lid and cook until all the water<br />
gets absorbed and it looks completely dry.<br />
6. Serve warm with rice, chapathi's or parathas.<br />

Note:<br />
Whole spices can also be replaced with spice powder.<br />

Tip:<br />
To get nice smoky flavour like barbeque, add thinly sliced lemon at the end before switching off the stove, stir it for about 5 minutes. An Apple a day, keeps the doctor away. I'm not here to do any research on this statement but to share a very simple recipe with apples. Suddenly I realized that I have more than 2 dozens of apples leftover in my refrigerator, with outside temperature 40 degree Celsius, I don't even want to think about apple pie, strudels or crumbles.<br />

Add all the ingredients in a blender except nuts. Blend it until nice and smooth. Pour it in individual serving glasses, top it up with nuts. Serve immediately. <br />

Do not store this smoothie, the colour of the smoothie will start changing due to apples which might be unappealing and not good either.<br />

The excitement, the careful planning, amidst the underlying fear when
you introduce the first morsel to your toothless baby, is an
unforgettable developmental milestone of the still fresh parents.
The joy and the enthusiasm with which this ceremony began slowly starts
to fade when your fast growing tiny tot gets pricky about eating and you
have less control over his/her eating habits. It is quite a common
scenario that the kiddo reluctantly takes in the food, takes 10 minutes
to swallow down that morsel, starts spitting just because he/she is not
in a mood to eat or throws away the food, being hooked up with a new toy
lying around, messes up the floor with those grains or half eaten
vegetables and your dinner table suddenly becomes a battle ground, a
rather sweet tender one!<br />

meaning, the food that has been messed up and scattered by the tiny hands of a child is sweeter than nectar.</div>

It is a sweet challenge and a huge responsibility for every mother to
feed the baby healthy, for it is the first three years of life that are
very important in the development of a child. Nourishing the baby with
the essential nutrients, slowly planning the introduction of every type
of food, checking against possible allergies are all very critical.<br />
<br />
Amidst this, making the toddler eat is a very big challenge. What not
she does to make the food more interesting? From selecting the child's
favorite food, cutting it in more interesting shapes and forms to
presenting it on his plate colorful and attractive!! Apart from these,
there needs to be stories told, songs sung and birds or animals shown!!
It indeed takes a lot of patience, time and creativity to handle a
child. Especially, if there is more than one child at home, then it adds
up to her thought process of providing all the essential nutrients to
satisfy everyones palates. The joy when your "mission" is accomplished
is indescribable!<br />

With this theme in mind, we, Healthy Morsels, are embarking on our next series <i><b>"Baby and Toddler Foods"</b></i>.

This month for Daring Baker's Challenge Jason from Daily Calender challenged us to make this Armenian delicacy. Actually we were given choice between two recipes. Nazook and Nutmeg were the choice given to us. Nazook is a pastry filled with sweet filling and Nutmeg Cake is a slightly twisted version of coffee cake. Although I wanted to make both the challenges, due to time constraints I made only the cake.<br />
<a name='more'></a>As always Daring Baker's Challenges are the best. The cake turned out really good, it was soft, light and fluffy. Perfect with a cup of tea. Although I didn't make Nazook along with this challenge, will definitely try it soon. Thank you Jason for this wonderful challenge.<br />

<b>Ingredients:</b><br />
Plain flour- 280 gm<br />
Milk- 240 ml<br />
Butter- 170 gm<br />
Brown sugar- 250 gm<br />
Grated Nutmeg- 1 tsp <br />
Pistachios- 50 gm<br />
Egg-1 <br />
Bicarbonate of soda- 1 tsp<br />
Baking powder- 2 tsp<br />

<b>Method:</b><br />
Preheat the oven to 190 degree Celsius. Grease and line a round cake tin. Sift the flour and baking powder in a large bowl. Add the brown sugar and give it a mix. Add the butter and rub it with your finger tips to make it like a bread crumbs. Add half of the mixture in the cake tin and press it with your fingers. Mix together the milk and bicarbonate of soda. Crack the egg in to the cake mixture and beat quickly, then add the milk and beat it with a electric mixture or whisk until it becomes lump free and smooth batter. Pour the mixture in to the tin and sprinkle the pistachios on top. Bake it in the preheated oven for 30 minutes or until a skewer inserted comes out clean. Take it out from the oven, leave it to cool in the wire rack for about 5 minutes. In summer although we look out for something cool like ice creams, smoothies or drinks often, still we have to fill our tummy with some food to meet the nutritional requirements for our body. Since aircondtioning the kitchen is not in reality here, the best way is to keep the cooking simple and quick, at the same time nutritious.<br />
<a name='more'></a>So I always look for one pot meal which is filled with grains, vegetables and pulses, which makes life much more easier. This is one such meal which can be made in minutes. Rajma can be replaced with any other pulses or mix of vegetables too. Well, there isn't much to talk about anything else today, so let's move on to the recipe now.<br />

Basmati Rice- 2 cups<br />
Dried Red Kidney beans- 1/2 cup<br />
Onion- 1 big sized ( chopped finely )<br />
Tomato- 1 big sized ( chopped finely)<br />
Ginger garlic paste- 2 tsp<br />
Green chilly- 1<br />
Biryani masala powder- 3 tsp<br />
Cinnamon stick-1/2 inch stick<br />
Cumin seeds- 1 tsp<br />
Coriander leaves- 4 stalk chopped finely<br />
Mint leaves - 2 stalk chopped finely<br />
Oil- 1 tbsp <br />

<b>Method:</b><br />
Soak the kidney beans in water for 3 hours and cook it in a pressure cooker for 3 to 4 whistles.<b> </b><br />
Heat oil in a heavy bottomed vessel or pressure cooker. Add cinnamon stick and cumin seeds. Add ginger garlic paste, onion and saute well until the raw smell goes. Then add tomatoes and saute well. Cover the vessel with a lid and cook until tomatoes gets mashed up. Add biryani masala powder, green chilly, coriander and mint leaves. Add the cooked kidney beans, rice, salt and 4 cups of water. If using a pressure cooker, cook upto 2 whistles. In a normal vessel, keep the flame in medium to low and cook until the rice is done. Serve the rice warm with just raita or any curries.<br />

It's summer here in India, actually not just summer, it's ssssummmmeeer. Why I want to stress the summer is, summer isn't much of fun here, although it's summer vacation for kids, it's like visiting friends and family, couldn't enjoy it to the most. The Sun has started showing the heat at it's peak, couldn't help about it, since we can't fight with nature. Along with this the frequent power cuts which makes it much more worse. Now we could do nothing with nature, either the power cut. So all we can do is just intake something to reduce the body heat, to avoid all scorching and scratching.<br />
<a name='more'></a> After taking gallons and gallons of water, still doesn't seem to satisfy our dry and sore throat. So we need something something else more than water to balance the heat here. Yes, it's hot and humid here but still there are few solutions which can manage the heat to some extent and reduce the body heat.<br />

Tender coconut water is one of the best thirst quencher, it also acts as a natural coolant for our body, apart from that melons which are available in abundance everywhere here, which is again one of the best thirst quencher. Now coming to the hero of our story,<b style="color: red;"> Sherbet</b>. There are many different type of Sherbets and Squash are available, the one which is most common and popular here in India is Nannari Sherbet or may be only in South India.<br />

Nannari or Sarsaparilla is a root which acts as a natural coolant for our body. Nannari is good for many skin infections, it also purifies the blood. Regular intake of it reduces the burning sensation in stomach. Our ancestors have made this syrup using nannari root, jaggery and lemon juice. After years , jaggery is been replaced with sugar. Although Jaggery is a better version, there are some myths that jaggery increase the body heat which may be even true. So I made the syrup using sugar and added a bit of colour to give the traditional look of Nannari Sherbet, a bright vibrant red colour. Nannari Sherbet which is available in markets are normally tinted with yellow, orange or red. You can leave it without adding any colour, which would be a perfect glass of healthy drink. <br />
When you have a bottle of syrup ready, add a squeeze of lemon juice, some water and few ice cubes, time to chill out...<br />
<br />
Preparation Time:5 minutes<br />
Cooking Time: 15 minutes+ 8 hours soaking time<br />
Makes nearly 400 ml of syrup<br />
<br />
<b>Ingredients:</b><br />
Nannari root- 5 to 6 pieces<br />
Water- 1/2 litre<br />
Sugar- 5 tbsp<br />
Lemon - juice of 4 lemon<br />
Few drops of food colouring of your choice (optional)<br />
<br />
<b>Method:</b><br />
Break the nannari root with the mortal and pestle. Break the outside hard and take the inner part of the root. Powder it in a blender. Heat the water until it starts boiling. Take it off from heat, add the powdered nannari. Cover it and let it rest for 1 whole night or minimum of 8 hours.<br />
After 8 hours, strain the liquid through a fine filter or muslin cloth. Add the sugar to the strained liquid and heat it again. Stir continuously until the sugar dissolves completely. Let it boil until it reaches a sticky consistency. Take it off from heat, add the colourin and let it cool down completely. Add the lemon juice and stir well and store it in a sterilized bottle. This can be kept for upto 2 to 3 weeks in the refrigerator.<br />
<br />
<b>To prepare the juice:</b><br />
Nannari syrup- 1 tbsp<br />
Water- 200 ml<br />
Lemon- Juice of 1/2 a lemon<br />
Sugar if needed<br />
Few ice cubes<br />
Basil seeds- 1/2 tbsp (soaked in water)<br />
<br />
Method:<br />
Add everything to a tall glass, give it a good stir and enjoy .<br />

Any one there to raise your hands to say a no to Dulce de leche. I'm sure if you have taste it before, you wouldn't say no. Dulce de leche makes wonders with cakes, cookies or desserts. I wonder why Dulce de leche shouldn't be served as a dessert on it's own straight out of the can. Whenever I make something out of Dulce de leche, I have to precautionally have an extra can than the recipe suggest, since I finish almost 1/2 of the can when I start preparing :)<br />

This is a very simple cake which I had made so many times before with and without amazing. Actually it taste amazing without icing. I have seen this cake in many blogs now, anyway the first time I saw this recipe from <a href="http://www.divyascookbook.com/2010/11/dulce-de-leche-bundt-cake.html">Divya's Easy Cooking</a>. In the beginning of last week, I made this cake with lots of icing on top and then Daring Baker's Crunch Bread with the fried patties. Second time, to make it less sinful I have cut down two sinners from the recipe, I replaced the plain flour with whole wheat flour and icing sugar with brown sugar. At last a few sprinkling of walnuts to make justice for the butter which I added. Below is the image of the wholewheat version, which tasted great too with a mild variation in texture. I better have an eye on my calories after this.<br />

<b>Ingredients: </b><br />
Plain flour- 200 gm<br />
Butter- 200 gm<br />
Eggs- 2<br />
Dulce de leche- 150 g<br />
Icing Sugar- 120 g<br />
Baking powder- 2 tsp<br />
Bicarbonate of soda- 1/4 tsp <br />
Vanilla essence- 1 tsp<br />
<br />
<i>For the Icing:</i><br />
Butter- 100 g<br />
Icing Sugar- 200 g<br />
Dulce de leche- 75 g<br />
Vanilla essence- 1 tsp<br />
Chocolate sprinkles and flaked almonds- to decorate on top ( optional )<br />

<b>Method</b>:<br />
Preheat the oven to 190 degree Celsius. Grease and line a 9 inch square cake tin. Sift the flour, baking powder and bicarbonate of soda in a large bowl. In separate bowl beat the butter and icing sugar with a electric beater until it looks light and fluffy. Now add the Dulce de leche to the butter mixture and beat well. Now add the eggs and essence and beat it again. Finally add the flour mixture and mix it well. Pour the batter into the prepared tin and bake it in the preheated oven for 30- 40 minutes or until a skewer inserted comes out clean.<br />
Take it out from the oven. Leave it to cool in the tin for about 5 minutes, then remove it out from the tin carefully and let it cool down completely.<br />
Once cooled completely, spread the icing on top and sprinkle with chocolate sprinkles and almonds on top.<br />
<br />
<i>To make the icing:</i><br />
The butter should be at room temperature before you start making the icing. Beat together the butter, icing sugar, Dulce de leche and essence until it looks smooth and creamy. Spread it on top of the cake.<br />
<br />
<b>For the whole wheat option:</b><br />
Replace whole wheat flour for plain flour and brown sugar for icing and add some extra nuts along with the batter. Follow the same amount and method as suggested above. <br />

Dutch crunch bread is not any particular type of bread, it's a topping which can be used for any type of bread. In Dutch it's called 'Tigerbrood' or 'Tiger Bread' since it gets a tiger like shell on top of the bread after baking. The end product is a sweet crunchy topping which is ideal for sandwiches.<br />

After so many obstacles I have to bake and post this recipe. First time, the yeast didn't work well which was my fault and the second time the yeast worked well and everything looked perfect, I happily left the bread in the oven and it didn't cook. I was looking for a long time and it remained the same, oops! power cut. At least if the power cut was for our whole area, I would have blamed the country's system easily but it was only in our house. It took me nearly 1 hour to figure out that the power cut was only in my house, then I have to call for an electrician and it took more than 2 hours to get everything right. My poor bread was waiting silently in my oven in half cooked stage which spoiled the texture and topping a bit, it didn't turn out to my expectation, still it was good. Also I was not in a mood to try it again immediately, so went ahead in posting the recipe. I used this bread for bean burger or bean sandwich, which is our favourite vegetarian option. Thank you Sara and Erica for sharing this amazing bread with us, this is definitely a keeper.<br />

Plain flour- 500 g<br />
Fast action dried yeast- 3/4 tbsp<br />

Rice flour- 240 g<br />

<b>Method:</b><br />
<b>Prepare the dough:</b><br />
Mix the flour,sugar, salt and yeast in a large bowl. Make a well in the center, add the warm milk slowly and beat with a electric mixer fitted with the dough hook. Once the dough comes together, stop beating with electric mixer. Knead the dough for 10minutes using your hand. Place the dough in a clean and oiled bowl.<br />

Once the dough has risen, knock the air back. Divide the dough into 5 equal rounds and place it in a baking sheet. Cover it loosely and let it rest for 30 minutes.<br />
Meanwhile preheat the oven to 200 degree Celsius. Apply a thick layer of Dutch crunch topping on top of each rolls. Bake it in the preheated oven for 30 to 40 minutes or it looks lightly brown on top.<br />
<br />
<b>To make the Dutch crunch topping:</b><br />
Mix all the ingredients together in a bowl and let it rest for about 15 minutes. Then use it in the recipe as suggested.<br />

<b>Ingredients:</b><br />
Mix of kidney beans,black eye beans, broad beans- 100 g<br />
Onion- 1 finely chopped<br />
Capsicum- 1/2 finely chopped<br />
Curry powder- 2 tsp<br />
Chilly powder-1/2 tsp<br />
Flour- 1 tbsp<br />
Bread crumbs-2 tbsp<br />
Salt and pepper to taste<br />
Oil for frying<br />

<b>Method:</b><br />
Soak the dried beans in water for overnight. Pressure cook the beans up to 4 to 5 whistles. Completely mash the beans with a masher, add the chopped onions, capsicum, flour, chilly powder, curry powder, salt and pepper, mix it well. If the mixture looks too crumbly, sprinkle some water to make it like a dough. Take small sized balls, roll it and pat it like patties. Dip the patties in the breadcrumbs completely.<br />
Heat oil in a pan, when the oil is heat enough, drop the patties one by one and fry it till it looks golden brown on both sides.<br />

Slice the bread into half. Apply the mayonnaise at the bottom. Place 2 to 3 spinach leaves, then a tomato slice, top it with a bean patties and a cheese slice. Place it under a grill for about a minute until the cheese starts melting.<b> </b>Serve it immediately.<b><br />
