It's been more than a year since I blogged. I have been thinking for a while to get back and sometimes I used to think may be there is full stop for blogging, but here I'm by the grace of god blogging again. Seriously, after one long year when I log into my account yesterday there was 660 + comments awaiting for moderation and of course 75 percent were spam and the rest 25 was from all blogger and non blogger friends. I still haven't finished filtering non spam comments from the spam comments, it might take a while.
Well, there is been lots of ups and downs in this past one year which kept me away from blogging. I would like to share only the ups i.e. my happy moments here. My passion for baking, my simple home made cakes and breads have reached the next level by the grace of almighty, I have my own Home based business for cakes, made only on orders. Please check my facebook page here. So that kept me a little bit occupied.
I know I have a lots of pending work in blogging with few uncompleted events, give me some time to dig into those old files, will soon work on that too Insha Allah.
Now coming to the recipe it's a Mava/ Khoya cake. I decided to blog about it but once I baked it and tasted it, OMG ! My business mind started whispering do you really have to blog about this, it's so good, keep it as your secret business recipe :) Nooo.. after all sharing is one of the best thing to do and I'm not the one who first found this recipe. So here I'm with a fluffy, buttery and yummy Khoya cake, Enjoy .....
Ingredients:
Khoya- 1/2 cup
Plain flour- 1 1/4 cup
Baking powder- 1 tsp
Bicarbonate of soda- 1/4 tsp
Milk- 1/4 cup
Butter- 6 tbsp
Sugar- 3/4 cup
Eggs- 2
Cardamom powder- 1/4 tsp optional
Saffron- 1/4 tsp soaked in 1 tbsp warm milk
Pista or Almond- 10 ( optional )
Method:
Preheat the oven to 180 degree Celsius. Grease and line a 15 cm square cake. Cream butter and sugar until it looks fluffy. Add the khoya and start beating well until it gets mixed together. Add eggs one by one until it gets mixed together. Add the saffron and cardamom mix well. Sift the flour, baking powder and soda in a separate bowl. Add the flour and milk alternatively to egg mixture and beat well.
Pour the batter into the greased pan and bake it in the preheated oven for 30 to 40 minutes or until a skewer inserted comes out clean. Take it out from the oven, cool it in the rack for few minutes. Gently remove the cake from the pan, let it cool down completely. After cooling down completely, slice it and store it in a air tight container.
