Peach Melba Fool

Peach Melba Fool is a creamy dessert made with fruits,cream and crushed amaretti or meringue.
This recipe is for the event 'Thanda Mela' by Srivalli's 'Cooking For All Seasons' celebrating her third year blog anniversary.All her previous events are  mega hit. To check out all her yummy recipes and her event details click here.
Ingredients:
Canned Peaches-200 g
Amaretti biscuits-10
Cranberries ,raspberries or strawberries-100 g
Light cream-200 ml
Icing sugar-1 tbsp
Method:
Reserving a few slices of peaches to serve ,blend the remaining peach ,cranberry and 1/2 tbsp of icing sugar in a blender.Whip the cream with the remaining icing sugar until soft peaks form.Fold the crushed biscuits and  half of the fruit puree into the cream to form a ripple effect,do not mix the puree completely.Pour the remaining fruit puree in individual serving glasses or dessert bowl,top it up with the cream mixture and place the slices of fruits on top.Chill in the fridge for minimum of 4 to 5 hours before serving.
