Baked Onion Rings

Oh yes, you read the title right. It's the same good old onion rings in baked form and not fried in oil.  Well, I don't take the pride of introducing this recipe first online.   Though there are many sources available for baked onion rings, I never thought it would turn so good. Before talking about this recipe, I should say how I got the idea of baking these delicate darlings.


It was Nupur, who first came up with this healthy idea of Fried to Favourite.  Basically the idea is to cut down the maximum amount of oil from our day to day food.  Most of us are addicted to these fatty fried food and get used to it.  At one point we realize that enough of these fried foods, let's start a healthy life style.  Healthy eating doesn't mean we have to compromise our favourite food completely.  The better way is to find an alternative method, so that we can enjoy our favourite food without any compromise in our healthy life style.  So the idea behind this event is to choose any one or two of our favourite food and find an alternative by baking or steaming. 

Actually Baked Onion rings was our last month challenge, although I completed everything well ahead of time, unfortunately couldn't post it on time, so here I'm posting it about a month late.  Enjoy this for now, we are also ready with this month challenge.  If you are eager to find more details about this event click here.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves 2

Ingredients:
Onion- 1 big sized (quartered and separated into rings )
Cornflakes- 1 cup
Bread crumbs- 1/2 cup
Buttermilk- 1/2 cup
Plain flour- 1/4 cup
Chilly powder- 1/4 tsp
Egg- 1
Olive oil- 2 tbsp
Salt and Pepper to taste.

Method:
Powder the cornflakes and breadcrumbs together in a blender.  Mix together buttermilk, plain flour, egg, chilly powder, salt and pepper.  Dip the onion rings in the mixture, remove it , shake off the excess liquid.  Now place the onion rings in a tray with cornflakes and breadcrumbs mixture.  Coat the onion rings in the cornflakes mixture well.
Preheat the oven to 220 degree Celsius.  Pour the oil on a rimmed baking sheet, tilt the oil to coat the tray completely.  Alternatively you can also use cooking oil spray.  Place the onion rings one by one in the tray.  Cook it for about 20 minutes, turning it in the middle.  Once it turns golden brown in colour, take it out and serve immediately.

Wow! I have been wanting to try baked onion rings, this seems to be the one! Have u reduced the amount of cornflakes as compared to the original recipe Ayeesha? Would love to try these!
