Koozh / Kheer with Pumpkin seed, coconut and rice

This is a recipe by my MIL, she's been asking me to try this for a long time, finally made it today.  Koozh would be the apt word for this , than to say it as kheer.  Koozh is something very similar to porridge, smooth, creamy and thick in consistency.  I found that coconut flavour is more dominating than pumpkin seeds, infact I couldn't find any trace of pumpkin seed .  Whatever, since I always love coconut flavour, I'm happy with this, hope you all enjoy it too.


Serves 2
Ingredients:
Pumpkin seeds- 2 tbsp
Fresh grated coconut - 2 tbsp
Raw rice- 1 tbsp
Sugar - 4 tbsp ( vary it according to your taste )
Cardamom pod - 1
Water- 2 cups
Rose essence - 1/2 tsp ( optional )

Method:

Soak the pumpkin seed and rice in water separately for 1 hour.  Peel the skin off from the seed, since the skin will give a unpleasant taste.  Grind together coconut, soaked rice , cardamom podand peeled seeds until it's very smooth and creamy.  Mix the ground mixture with sugar and water.  Heat the mixture in medium flame and keep stirring continuously until it looks thick porridge like consistency.  Finally add the rose essence.  Serve it warm or cold.

We call it Kheer here in Pakistan. Its my Favorite dessert of all time... winter or summer. :) Yours is looking such a mouth watering like my mom use to make! :)
