Peach and Vanilla slices

Ever since i  came across this recipe from the book ' Bread ' , i just fall in love with the look of of it, but my pictures which i have given here is not so exciting. Any way i'm not a big fan of cheesecakes, the filling for this bread was almost like cheesecake ingredients, still i loved it, it tasted delicious like a custard tart, yet simple to make.
Ingredients:
White Bread Flour-225 gm
Warm water- 115 ml
Butter-25 gm melted
Brown sugar-25 gm
Salt-1/2 tsp
Dried yeast-1 tsp
For the filling:
Brown sugar-40 gm
Cornflour-1 tbsp
Mascarpone cheese-140 gm
Curd cheese- 150 gm
Eggs-2 lightly beaten
Vanilla extract-1 tsp
Apricot jam or Strawberry jam - 2 tbsp
Peaches-9 halved and stoned
Method:
Mix together the flour, salt, sugar and yeast together. Add the melted butter, lightly beaten eggs and warm water knead it together to make a smooth dough. Place the dough in a clean bowl, cover it with cling film and leave it in a warm place to rise for about 1 hour or until doubled in size.
When the dough has risen , punch the air back, roll it out into a rectangle to fit a 23 cm square cake tin. Place the rolled out dough in the tin and cover it with a cling film.
Preheat the oven to 200 degree celsius. Make the filling by mixing sugar and cornflour in a small bowl. Put the mascarpone and curd cheese in a large bowl and beat in the sugar mixture, followed by the eggs and vanilla extract.
Spread the apricot jam on top of the bread, pour the filling on top of the jam, arrange the peach slices on top of the cheese mixture. Bake it in the preheated oven for 20 to 25 minutes or until the filling is set and lightly golden brown on sides.
Leave it to cool slightly before cutting into slices. Serve warm with a cup of tea.
