In this bread i have used corn meal. Corn meal is different from corn flour. Corn meal is yellow in colour, it's like whole wheat flour, it contains bran, germ and endosperm whilst cornflour is like white flour. Cornflour is a refined flour in which bran and germ are removed. So corn meal is rich source of dietery fibre.
The corn meal in this bread not only gives wonderful yellow colour, it also gives a unique sweet flavour from the corn.
Ingredients:
Corn Meal- 225 g
Whole Wheat flour or White flour- 225 g
Butter- 100 g melted
Eggs- 2
Milk- 250 ml
Canned sweet corn drained from water- 100 g
Baking powder- 2 tsp
Bicarbonate of soda- 1/2 tsp
A pinch of salt
Method:
Lightly grease and line a 2 lb loaf tin and set aside. Preheat the oven to 190 degree celsius.
Mix the corn meal , whole wheat flour and salt in a large bowl. Add the egg yolks, milk and melted butter. Stir well to form a quite sticky dough.
In a separate clean bowl, beat the egg whites until stiff peak forms. Fold the egg white and sweet corn to the flour mixture. Transfer the mixture to the prepared tin, level the surface, sprinkle some cornmeal on top.
Bake it in the preheated oven for 45 minutes or until a skewer inserted comes out clean.
Serve the bread by itself or with some salsa and salad. or even meat.
